
This is as close to sunshine as I’ve been in weeks and it is starting to drive me crazy. It seems like it just won’t stop raining and I have had to drag our heavy blankets and clothes out again.
I keep hoping that the weather forecasts will change, but as I sit here and stare out my window, all I see is dark clouds.
It really seems like summer hasn’t arrived at all and we’ve all pretty much given up on spring.
We recently brought home new popsicle molds and I thought that it would be fun to try them out. Rather than just pour fruit juice into them I decided to try something a little more interesting. I wanted something that would freeze smooth and that I could add fruit pieces to.
Then I discovered that there is a special event going on over at Mike’s Table called You Scream, I Scream, We all Scream for Frozen Desserts. Coincidence? Perhaps, but since I had this frozen dessert all ready to go I decided to join the party. So head on over and check out Mike’s invitation and join in if you can.
For 6 popsicles
80 ml whipping cream
250 ml apricot juice
12 cherries
Your favourite popsicle molds
Pour the whipping cream and the juice into a bowl and whisk until blended.
Cut the cherries into pieces and drop them into the mold.
Pour in the juice/cream mixture.
Freeze overnight.

I had to turn on the heater yesterday! Tomorrow it’s supposed to be sunny – let’s hope!

Coming back from Hotlanta, I was very disappointed to find rain pouring non-stop again! The popsicles help bring some sunshine though!
If it doesn’t stop soon I may have to indulge in some retail therapy!!
